Hearty Lentil Soup
This hearty soup is quick and easy. It works great as a dinner or leftover lunch.

Ingredients
- 2 cups lentils
- 8 cups waters
- 1 pound sausage
- 1/2 cup onions chopped
- 1/2 cup celery chopped
- 1/2 cup carrots finely chopped
- 3 tablespoons parsley snipped
- 1 clove garlic minced
- 2 1/2 teaspoons sea salt
- 1/4 teaspoon pepper
- 1/2 teaspoon dried oregano crushed
- 1 can (16 oz) tomatoes
- 2 tablespoons wine vinegar
Directions
- Rinse lentils. Drain and place in soup pan with water and remaining ingredients except tomatoes and wine vinegar. Cover and simmer for 1 1/2 hours. Add tomatoes, breaking up any large pieces, and wine vinegar. Simmer, covered, for 30 minutes longer. Season to taste.
